Ingredients

  • Beets
  • 2 Tbsp. salt
  • 2 c. vinegar
  • 3 c. water
  • 2 1/2 c. sugar

Instructions

  1. Wash and cook the beets until tender.
  2. Remove the skin from the cooked beets.
  3. Slice or quarter the beets.
  4. Heat salt, vinegar, water, and sugar until the salt and sugar dissolve.
  5. Add the prepared beets to the heated mixture.
  6. Heat just to boiling.
  7. Pack the hot beets and liquid into hot jars and seal.
