Sweet Corn Bread Pudding

Ingredients

  • 1 (8 1/2 ounce) box Jiffy corn muffin mix
  • 1 (15 ounce) can corn or 2 cups corn
  • 2 ounces cream cheese
  • 4 ounces sour cream
  • 2 eggs
  • 1/4 cup butter, softened
  • 3/4 cup sugar
  • 1/2 cup cream or 1/2 cup half-and-half

Instructions

  1. In a large bowl, cream together sugar, cream cheese and butter.
  2. Add in eggs and mix well.
  3. Stir in sour cream, corn and muffin mix.
  4. Pour into a greased cassserole dish or and bake at 350 for approx 1 hour or until golden brown and toothpick pushed into the center, comes out clean.
