Ingredients

  • 7 lb. cucumbers
  • 2 c. pickling lime
  • 5 lb. sugar
  • 1 Tbsp. turmeric
  • 2/3 c. salt
  • 2 Tbsp. alum
  • 2 qt. vinegar
  • pickling spice

Instructions

  1. Slice cucumbers.
  2. Soak cucumbers in lime water for 12 hours, then rinse.
  3. Soak cucumbers in salt water for 4 hours, then rinse.
  4. Soak cucumbers in clear water for 2 hours, then drain.
  5. Bring a pot of water to a boil and add alum; cook cucumbers in this alum water.
  6. Rinse cucumbers in hot water.
  7. Make syrup by combining sugar, vinegar, turmeric, and pickling spices in cheesecloth.
  8. Boil cucumbers in the syrup for 30 minutes.
  9. Cool the pickles and pack in sterilized jars.
