Sweet & Sour Broccoli

Ingredients

  • 2 Tbsp minced red onion
  • 2 tsp olive oil
  • 1 tsp minced garlic
  • 1/2 tsp oregano
  • 1 3/4 c broccoli florets, cut into smaller chunks
  • 1/3 c canned diced tomatoes with juice
  • 1 Tbsp raisins

Instructions

  1. In a skillet, combine onion, oil, garlic, oregano, and salt to taste. Cook, stirring, over low heat until fragrant, about 2 minutes. Add broccoli and stir to coat. Cook until sizzling, about 1 minute. Add tomatoes and raisins. Cook until broccoli is crisp but tender, 1 to 2 minutes.
