- Discard seeds from the peppers and pass them through a food chopper twice, using the finest knife.
- Measure the chopped peppers.
- Use enough juice from the peppers to make 4 cups level.
- Add sugar and vinegar to the measured peppers and mix thoroughly.
- Heat the mixture rapidly to a full rolling boil.
- Stir constantly before and while boiling.
- Boil hard for 2 minutes.
- Remove from heat and stir in fruit pectin.
- Stir and skim alternately for 8 minutes to cool slightly and prevent floating.
