Sweet and tangy Swiss Pickles feature vibrant peppers and a fruity pectin glaze, offering a delightful condiment perfect for adding zest to sandwiches, salads, or snack platters.

Ingredients

  • 12 medium peppers
  • 1 bottle fruit pectin
  • 6 1/2 cups sugar

Instructions

  1. Discard seeds from the peppers and pass them through a food chopper twice, using the finest knife.
  2. Measure the chopped peppers.
  3. Use enough juice from the peppers to make 4 cups level.
  4. Add sugar and vinegar to the measured peppers and mix thoroughly.
  5. Heat the mixture rapidly to a full rolling boil.
  6. Stir constantly before and while boiling.
  7. Boil hard for 2 minutes.
  8. Remove from heat and stir in fruit pectin.
  9. Stir and skim alternately for 8 minutes to cool slightly and prevent floating.
