Ingredients

  • 2 lb meat bones
  • 8 onions, chopped
  • 4 cups rice
  • 1 cup Crisco oil
  • juice of 4 tomatoes
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon cardamom
  • 2 tablespoons salt
  • 4 carrots, sliced thinly

Instructions

  1. Mix the tomato juice with the ground black pepper, cumin, and cardamom; set aside.
  2. Heat the oil in a large pot, then add the meat bones and cover for 2 minutes.
  3. Uncover and stir well to brown slightly.
  4. Add the chopped onions and saute with the meat until almost golden brown.
  5. Pour in the tomato mixture and hot water; cook for 40 minutes or until the meat is tender.
  6. Remove the meat from the tomato sauce and set aside.
  7. Wash the carrots and boil in 2 cups of water for 20 minutes or until tender.
  8. Add 1/2 teaspoon salt and 1 tablespoon oil to the carrots; cook briefly.
  9. Drain the carrots, saving the cooking water, and set carrots aside.
  10. Strain the carrot cooking water over the tomato mixture.
  11. Add the rice to the tomato mixture and broth.
  12. Place a spoon in the center of the rice; if it remains standing, the broth is just right.
  13. When the rice reaches a boiling stage, reduce heat and cook covered for 40 minutes.
  14. Garnish with fried almonds and pine nuts before serving.
