A creamy Swiss potato casserole combining tender potatoes, melted Swiss cheese, pimientos, olives, and green onions, perfect for comforting family dinners or potlucks.

Ingredients

  • 6 lb. potatoes
  • 2 (4 oz.) jars chopped pimientos
  • 1 c. salad olives, chopped
  • 2 bunches green onions, chopped
  • 12 slices Swiss cheese
  • 1 1/4 c. mayonnaise
  • salt and pepper to taste

Instructions

  1. Cook potatoes until done; peel and cut into chunks.
  2. Add pimientos, chopped olives, chopped green onions, 8 slices of cheese cut into cubes, and mayonnaise; mix well.
  3. Season with salt and pepper to taste.
  4. Place the mixture in an oblong 2-quart casserole dish.
  5. Top with the remaining slices of Swiss cheese.
  6. Bake uncovered at 350°F for 30 minutes or until bubbly.
