Flavorful taco stuffed potatoes combine baked potatoes with seasoned ground beef and melted cheese, making a hearty, cheesy dish perfect for a family dinner or casual gathering.

Ingredients

  • 4 large baking potatoes
  • 1 lb ground beef
  • 2 cups grated Cheddar cheese
  • 1 package taco seasoning mix

Instructions

  1. Bake potatoes at 350°F for 1 hour or until done, unwrapped. Cool slightly.
  2. Brown hamburger meat in a skillet.
  3. Prepare taco seasoning mix according to package directions.
  4. Slice potatoes in half lengthwise and scoop out the potato into a large bowl.
  5. Add cooked taco meat and 1 1/2 cups of cheese; mix well.
  6. Spoon the potato mixture back into the potato skins.
  7. Place the stuffed potatoes in a greased 9 x 13-inch pan.
  8. Sprinkle with remaining cheese on top.
  9. Bake for 30 minutes at 350°F.
