Ingredients

  • 2 cups sugar
  • 1/2 cup light corn syrup
  • 3/4 cup water
  • few drops oil of clove
  • red food coloring

Instructions

  1. Wash and dry 10 eating apples; insert a wooden skewer into the blossom end of each apple.
  2. Combine sugar, light corn syrup, and water in the top of a double boiler; cook over direct heat, stirring, until the sugar dissolves.
  3. Add oil of cloves and a few drops of red food coloring; continue cooking without stirring until a drop of mixture tested in cold water forms a hard piece that cracks easily (290°F on candy thermometer).
  4. Set the pan over boiling water to keep warm.
  5. Dip each apple quickly into the hot syrup.
  6. Remove the apple and whirl it until the syrup covers the surface evenly.
