Taffy Apples

- Wash and dry 10 eating apples; insert a wooden skewer into the blossom end of each apple.
- Combine sugar, light corn syrup, and water in the top of a double boiler; cook over direct heat, stirring, until the sugar dissolves.
- Add oil of cloves and a few drops of red food coloring; continue cooking without stirring until a drop of mixture tested in cold water forms a hard piece that cracks easily (290°F on candy thermometer).
- Set the pan over boiling water to keep warm.
- Dip each apple quickly into the hot syrup.
- Remove the apple and whirl it until the syrup covers the surface evenly.
