Ingredients

  • 3 eggs
  • 2 lemons or limes
  • 1 1/4 cups sugar
  • 1/4 cup melted butter
  • 1 unbaked pastry shell
  • vanilla ice cream or Cool Whip

Instructions

  1. Peel or zest the outer peel of the lemons or limes, being careful not to include the bitter pith.
  2. Juice and strain the lemon or lime liquid.
  3. Put eggs, lemon zest, juice, and sugar in a blender.
  4. Process on high for 3 minutes.
  5. Add melted butter and process for 30 seconds.
  6. Pour the mixture into the unbaked pastry shell.
  7. Bake at 350°F for 30 to 35 minutes.
  8. Cool and chill before serving. Serve with vanilla ice cream or Cool Whip.
