A quick and delicious quiche featuring a savory combination of vegetables, Swiss cheese, and creamy soup, perfect for breakfast, brunch, or dinner for the whole family.

Ingredients

  • 2 frozen ready-bake pie crusts
  • 16 oz. bag frozen vegetables
  • 7 eggs
  • 2 cups grated Swiss cheese
  • 1 can cream-style condensed soup

Instructions

  1. Steam and drain the frozen vegetables.
  2. Arrange the cooked vegetables in the prepared pie crusts.
  3. In a blender, mix the cream-style condensed soup and eggs until smooth.
  4. Scatter 1/2 cup of grated Swiss cheese over the vegetables in each pie crust.
  5. Pour the soup and egg mixture into the pie crusts over the vegetables.
  6. Sprinkle the remaining cheese over the top of each pie.
  7. Bake in a 375°F oven until the quiches are firm, approximately 45 minutes.
