Ingredients

  • 2 qt. water
  • 1 lb. ham, diced
  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1/2 to 3/4 tsp. salt
  • 1 (16 oz.) can tomatoes, undrained and chopped
  • 1 (10 oz.) can tomatoes and green chiles (optional)

Instructions

  1. Sort and wash the bean mix, then soak overnight.
  2. Drain beans and add 2 quarts water, diced ham, chopped onion, minced garlic, and salt.
  3. Cover and bring to a boil.
  4. Reduce heat and simmer for 1.5 hours until beans are tender.
  5. Add chopped tomatoes (and green chiles if desired).
  6. Simmer for 30 minutes, stirring occasionally.
