  • 5 lb. tenderloin
  • 2 Tbsp. whole white peppercorns
  • 2 Tbsp. whole green peppercorns
  • 2 Tbsp. whole black peppercorns
  • 1 tsp. salt
  • 1 large garlic clove
  • 1/2 c. brandy or cognac
  • 1/2 stick butter

Instructions

  1. Pierce the tenderloin with a fork to tenderize.
  2. Crush 1 tablespoon each of green, white, and black peppercorns.
  3. Rub the meat with salt, crushed peppercorns, garlic, half the brandy, and melted butter.
  4. Place the meat on a platter and rub the mixture thoroughly into it.
  5. Cover with plastic wrap and refrigerate for 2 to 4 hours.
  6. Set the oven to 450°F (232°C).
  7. Place the meat on a baking dish and cover with the remaining cracked peppercorns.
  8. Cook for 20 minutes.
  9. Reduce oven temperature to 400°F (204°C) and cook for another 20 minutes.
  10. Remove the meat from the oven and let it stand, covered, for 5 to 10 minutes.
  11. Slice into 1/2 to 3/4-inch slices and place on a serving platter.
  12. Heat the remaining brandy until just boiling.
  13. Pour the brandy over the meat and flambé.
