Flavorful and customizable tacos featuring seasoned beans, fresh tomatoes, crisp lettuce, and melted cheese, perfect for quick weeknight dinners or casual gatherings.

Ingredients

  • 12 taco shells or tortillas
  • 16 oz. can fat-free refried beans
  • 2 tomatoes
  • 2 cups shredded romaine or iceberg lettuce
  • 4 oz. low-fat Cheddar cheese
  • nonfat sour cream
  • salsa

Instructions

  1. Preheat oven to 350°F. Place taco shells on a baking sheet and bake for 6 minutes, or warm tortillas slightly if using tortillas.
  2. While shells or tortillas are warming, prepare the fillings.
  3. Chop tomatoes and shred lettuce and cheese.
  4. Spread refried beans onto each taco shell or tortilla.
  5. Top with chopped tomatoes, shredded lettuce, and cheese.
  6. Serve with nonfat sour cream and salsa.
