Ingredients

  • 2 lb. round Cheddar cheese
  • 16 oz. can refried beans
  • 4 oz. can chopped green chilies
  • 1 medium tomato
  • 2 cloves garlic
  • 1/4 tsp. dried whole oregano
  • 1/4 tsp. hot sauce
  • 5 corn tortillas
  • 2 Tbsp. vegetable oil

Instructions

  1. Hollow out the center of the cheese round, leaving a shell 1/2-inch thick.
  2. Set the shell aside and shred the cheese, then set aside.
  3. Combine refried beans, chopped green chilies, chopped tomato, minced garlic, dried oregano, and hot sauce in a medium saucepan.
  4. Cook over medium heat, stirring often, until thoroughly heated.
  5. Use the shredded cheese to fill the hollowed-out cheese shell or serve alongside.
