Ingredients

  • 1 lb. haddock fillets
  • 1/2 cup chopped onions
  • 1 cup chopped celery
  • 1 bay leaf
  • 1 can stewed tomatoes
  • parsley flakes

Instructions

  1. Saute chopped onions and chopped celery until tender.
  2. Add stewed tomatoes and sprinkle parsley flakes over the top.
  3. Place haddock fillets on top of the tomato mixture.
  4. Simmer for 10 minutes, then turn over the fish.
  5. Continue simmering for another 10 to 20 minutes until the fish is flaky.
