Tex-Mex Stew

Ingredients

  • 2 lb. ground beef
  • 2 large garlic cloves, minced
  • 1 (28 oz.) can whole tomatoes
  • 1 (17 oz.) can whole corn
  • 1 c. Pace picante sauce
  • 1 (15 oz.) can pinto beans
  • 1 large onion, chopped
  • salt and pepper to taste

Instructions

  1. In a Dutch oven, brown the ground beef with minced garlic and chopped onion. Drain off the grease.
  2. Drain and coarsely chop the whole tomatoes, reserving the juice.
  3. Add the chopped tomatoes, reserved juice, picante sauce, cumin, salt, and pepper to the meat mixture. Bring to a boil, then reduce heat.
  4. Add the corn and pinto beans to the mixture.
  5. Cover and simmer for 20 to 30 minutes.
  6. Serve with additional picante sauce, accompanied by cornbread or nacho chips.
