Ingredients

  • 3 or 4 lb beef roast
  • 1 large potato
  • 1 large onion
  • 1 1/2 lb Cheddar cheese
  • 1 small can green chilies
  • 1 can cream of mushroom soup
  • 1 carton sour cream
  • 12 large flour tortillas
  • 1 cup water
  • 1 Tbsp garlic powder

Instructions

  1. Salt the beef roast and place it in a pan with water.
  2. Simmer for 3 to 4 hours until the roast shreds easily.
  3. During the last hour of simmering, add the potato.
  4. When done, mash the potato and shred the beef together.
  5. Add the cream of mushroom soup, green chilies, and chopped onion to the beef mixture.
  6. Place the mixture back on the stove and heat just long enough to stir everything together.
  7. Lightly brush each flour tortilla with butter.
  8. Place a scoop of the beef mixture in each tortilla, then top with a large spoon of sour cream and cheese.
  9. Fold each tortilla and place in a large pan.
  10. Spread the remaining sour cream and cheese on top of the assembled burritos.
  11. Bake at 400°F (200°C) for 20 minutes until bubbly and golden.
