- Salt the beef roast and place it in a pan with water.
- Simmer for 3 to 4 hours until the roast shreds easily.
- During the last hour of simmering, add the potato.
- When done, mash the potato and shred the beef together.
- Add the cream of mushroom soup, green chilies, and chopped onion to the beef mixture.
- Place the mixture back on the stove and heat just long enough to stir everything together.
- Lightly brush each flour tortilla with butter.
- Place a scoop of the beef mixture in each tortilla, then top with a large spoon of sour cream and cheese.
