Texas Pineapple Cake

Ingredients

  • 2 c. flour
  • 1 1/2 c. sugar
  • 1/4 c. brown sugar, packed
  • 1 c. chopped walnuts or pecans
  • 1 large can crushed pineapple and juice
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2/3 c. sugar
  • 1 stick oleo
  • 1/4 c. milk

Instructions

  1. Combine the first 7 ingredients in large loaf pan.
  2. Stir to mix.
  3. Bake at 350° for 35 minutes.
  4. Remove and top.
  5. Bring the 2/3 cup sugar, oleo and milk to a boil.
  6. Pour over warm cake; sprinkle with the coconut.
