Texas Quiche

Ingredients

  • 2 (4 oz.) cans whole green chillies
  • 1 lb. Monterey Jack cheese or sharp Cheddar cheese, shredded
  • 6 to 7 eggs, beaten
  • salt to taste

Instructions

  1. Cut and remove the seeds from the chillies. Line baking dish with chillies; sprinkle cheese on top.
  2. Pour beaten eggs and salt over cheese.
  3. Bake 25 minutes or until set.
  4. Let cool for 30 minutes; cut into small squares.
  5. This is good served warm or cold and freezes well.
