Ingredients

  • 2 cans drained black-eyed peas
  • 1 can drained shoepeg corn
  • 1 chopped tomato
  • 1/4 C chopped bell pepper
  • 1/4 C chopped sweet onion
  • Good Seasonings Italian Dressing packet
  • Juice from mandarin orange cans
  • Red Wine Vinegar

Instructions

  1. Mix all ingredents in a bowl and for the dressing packet use alternate recipe for less oil, but instead of water use the juice from mandarin orange cans. Marinate in refrigerator for 2 hours before serving. Serve cold with tortilla chips.
