Thin Mints are delightful, mint-flavored chocolate cookies with a crisp texture, perfect for fans of sweet, refreshing treats and ideal for sharing at gatherings or as a gift.

Ingredients

  • 1 1/2 lb almond bark
  • 1 cup chocolate chips
  • 1 teaspoon mint flavoring
  • 4 drops green coloring
  • 3 tablespoons cream

Instructions

  1. Put 2/3 of the almond bark and chocolate chips in a microwave-safe bowl.
  2. Microwave for 2 1/2 to 3 minutes, stirring until melted and smooth.
  3. Spread half of this mixture on a wax paper-lined 9 x 13-inch pan.
  4. Allow to cool in the refrigerator until hard.
  5. Let the remaining chocolate mixture set at room temperature.
  6. Microwave the remaining 1/3 of almond bark for 1 to 1 1/2 minutes until soft.
  7. Add green coloring and mint flavoring to the melted almond bark.
  8. Add cream gradually until the mixture is smooth enough to spread.
  9. Spread this mint-flavored layer over the cooled chocolate layer.
  10. Cool until set.
  11. Once cooled, bring to room temperature before cutting into pieces.
