Ingredients

  • 1 pkg. regular tofu, drained
  • 1 (8 oz.) pkg. cream cheese
  • 3 eggs
  • 1 c. sugar
  • 1 tsp. vanilla extract
  • 24 vanilla wafers
  • dark sweet cherry pie filling and topping

Instructions

  1. Place tofu on paper towel and gently squeeze out excess moisture.
  2. Crumble the drained tofu and place it in a blender.
  3. Add cream cheese, eggs, sugar, and vanilla extract to the blender.
  4. Whirl until smooth and creamy.
  5. Spoon the mixture into vanilla wafer-lined mini muffin tins or cups.
  6. Bake at 350°F (175°C) for about 20 minutes or until set.
  7. Allow to cool, then top with dark sweet cherry pie filling and topping.
