A fresh and colorful tomato and egg salad featuring sliced tomatoes, lettuce, and a simple dressing, perfect for a light lunch or a side dish with vibrant flavors.

Ingredients

  • 1 medium tomato
  • 2 lettuce leaves

Instructions

  1. Set the tomato stem end down and cut into 8 evenly spaced slices, cutting to within 1/2-inch from the bottom.
  2. Do not cut all the way through the tomato.
  3. Arrange lettuce on a salad plate and place the tomato on top of the lettuce.
  4. Gently spread the tomato slices slightly apart and drizzle half of the dressing over the tomato.
  5. Cut egg slices and place them between each tomato slice.
  6. Drizzle with the rest of the dressing.
  7. Garnish with chopped green onions and/or parsley.
