Tomato Butter

A sweet and tangy tomato butter made with ripe tomatoes, lemon juice, sugar, and cinnamon, perfect for enhancing meat dishes or spreading on bread.

Ingredients

  • 3 lb. ripe tomatoes
  • juice of 1 lemon
  • 4 c. sugar
  • 1 tsp. cinnamon

Instructions

  1. Peel the tomatoes.
  2. Core and cut the tomatoes into slices or small pieces.
  3. Combine all ingredients in a large, heavy kettle.
  4. Heat to boiling.
  5. Cook, stirring frequently, until the mixture thickens (about an hour).
  6. Cool the mixture and stir again.
  7. Pour into hot, sterilized glasses.
  8. Can be frozen if desired.
