Tomato Orange Soup

Ingredients

  • 1/2 c butter or olive oil (I use less)
  • 1/2 medium onion diced
  • garlic diced
  • 2 14oz cans diced tomatoes
  • 1 tsp salt, I use less
  • 1/2 tsp pepper
  • 1/4 tsp baking soda
  • 1/2 tsp dried thyme
  • 1 cup fresh orange juice
  • 1/2 cup whipping cream or half and half

Instructions

  1. Saute onions and garlic in melted oil then add tomatoes, salt and pepper, baking soda and thyme. Bring to boil and simmer for about 10 min till slightly thickened. Puree in blender till very smooth and strain if you want.
  2. Return to pan and stir in orange juice and whipping cream.
  3. I serve it with croutons smeared with pesto
