Tomato Rice Beef Bake

Ingredients

  • 2 (14 1/2 oz.) cans stewed tomatoes
  • 1 1/2 c. Minute rice
  • 3/4 c. hot water
  • 1 lb. lean ground beef
  • 1 small jar mushrooms, sliced
  • 1 small onion, chopped fine
  • salt to taste
  • Velveeta cheese

Instructions

  1. In 9 x 9-inch square baking dish, place tomatoes, rice and water.
  2. Set aside.
  3. In skillet, brown beef, onion and mushrooms. Salt to taste; drain fat.
  4. Add to ingredients in baking dish. Place in oven for 15 minutes.
  5. Cover top with cheese and bake until melted.
