Tomato Spaghetti

A hearty and flavorful tomato spaghetti dish with crispy bacon and sweet sautéed onions, perfect for a comforting weeknight dinner for bacon and pasta lovers.

Ingredients

  • 6 or 7 strips bacon
  • 1 small onion, diced
  • 1 large can tomatoes, mashed
  • salt
  • pepper

Instructions

  1. Fry the bacon strips in a skillet until crispy.
  2. Remove the bacon and place on a napkin to drain.
  3. Remove all but a small tablespoon of bacon grease from the skillet.
  4. Add diced onion to the remaining grease and lightly brown.
  5. Heat the mashed tomatoes in a small pan.
  6. Chop the cooked bacon into small pieces and add to the tomato pan along with the sautéed onions.
  7. Season with salt and pepper, bring to a boil, then taste and adjust seasoning as needed.
  8. Cook the spaghetti in boiling water until tender but not mushy.
  9. Drain the spaghetti in a colander and rinse with hot water.
  10. Add the drained spaghetti to the tomato and bacon mixture, stirring to combine.
  11. Serve hot and enjoy.
