Crispy, golden tostones are twice-fried plantain slices seasoned lightly with adobo, offering a savory snack or side perfect for sharing and pairing with various dishes.

Instructions
- Peel the plantain and cut into diagonal 3/4-inch thick slices.
- Deep fry the slices in hot oil at 375°F until tender but crusty, about 1 to 2 minutes.
- Drain the fried plantains on paper towels.
- Cover each plantain slice with wax paper and press down with the palm of your hand to flatten.
- Deep fry the flattened plantains again until crusty and golden on both sides.
- Drain on paper towels again.
- Season lightly with adobo and serve hot.
