Ingredients

  • 5 to 6 chicken breasts
  • 1 small onion, minced
  • 10 oz. mushrooms, sliced
  • 2 cans cream of soup (chicken, mushroom or celery)
  • 1 pkg. stuffing mix
  • 2 stalks celery, diced

Instructions

  1. Dip boneless, skinless chicken pieces into flour, then egg wash and finally into crushed Ritz cracker crumbs (into which your favorite herb or spices have been added).
  2. Saute in hot vegetable oil about 5 minutes on each side, depending on the thickness of the chicken.
