Ingredients

  • 1 (20 oz.) can pineapple chunks
  • 2 medium oranges, peeled and sliced
  • 1 1/2 c. seedless green grapes
  • 1/2 c. shredded coconut
  • 6 oz. Neufchatel cheese or cream cheese, softened
  • 2 Tbsp. brown sugar

Instructions

  1. Drain pineapple; reserve juice.
  2. Cut oranges in half.
  3. Combine pineapple and oranges.
  4. Add coconut and chill.
  5. Combine cheese and 1/3 cup juice.
  6. Stir brown sugar into cheese mixture.
  7. Spoon atop fruit-coconut mixture.
  8. Makes 4 or 5 servings.
