"Tsourekia" - Easter Bread

Ingredients

  • 1 cup milk
  • 1 1/2 cups sugar
  • 1 cup butter
  • 1 tablespoon salt
  • 3 small cubes frozen yeast
  • 8 eggs
  • approximately 3 pounds flour
  • sesame seed

Instructions

  1. In a large saucepan, warm the milk.
  2. When the milk is warm, add salt, yeast, and 1 1/2 cups of flour.
  3. Stir until the yeast is melted.
  4. Put aside and let rise for 1 hour.
  5. After 1 hour, add the beaten eggs, sugar, melted butter, lemon, and orange peels.
  6. Stir in well with your hand, not a mixer.
  7. Begin adding flour slowly until it forms a soft, non-sticky dough.
  8. Knead the dough well.
  9. Put aside to rise for 3 to 4 hours.
  10. When well risen, knead again.
  11. Shape into braids or loaves.
