Ingredients

  • 4 baking potatoes, baked
  • 1 c. mayonnaise
  • 1/2 c. grated Cheddar cheese
  • 1/4 c. chopped green pepper
  • 1/4 c. chopped ???
  • 1/4 c. chopped scallions

Instructions

  1. Scoop centers from shells.
  2. While hot, toss lightly with ingredients.
  3. Spoon each into shells.
  4. Bake 20 minutes at 400°.
