Turkey pockets are quick, flavorful sandwiches with diced turkey, crisp vegetables, and fresh sprouts, perfect for a light lunch or a healthy snack ready in minutes.

Ingredients

  • 8 oz. skinned, boned, cooked turkey, diced
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • 2 teaspoons light or no-fat mayonnaise
  • 1 teaspoon lime or lemon juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground red pepper
  • 2 whole pita breads

Instructions

  1. In a bowl, combine diced turkey, diced celery, diced red onion, mayonnaise, lime or lemon juice, salt, and ground red pepper; refrigerate for 30 minutes.
  2. Slice each pita bread halfway around the edge and open to form a pocket.
  3. Stuff half of the turkey mixture into each pita pocket and garnish with alfalfa sprouts.
