Turkey-Sage Chowder

Ingredients

  • 6 slices bacon, coarsely chopped
  • 2 c. chopped onion
  • 1 1/2 Tbsp. Russet potatoes, peeled and cut in half
  • 3 c. half and half
  • 1 (10 3/4 oz.) can cream of potato soup
  • 3 Tbsp. fresh chopped sage
  • 3 3/4 c. diced turkey

Instructions

  1. Cook bacon in large pan over medium heat until crisp. Remove to paper towel to drain. Add onions to pan and saute 5 minutes or until tender. Add potatoes, milk, broth, soup and 2 tablespoons of sage. Bring to boil. Reduce heat to low and simmer until potatoes are tender, stirring occasionally, about 10 minutes. Add turkey, bacon and remaining tablespoon sage. Simmer until heated through, stirring occasionally, about 4 minutes. Season to taste with salt and pepper.
