Turkey Steak

Ingredients

  • 1 turkey breast
  • 1 qt. milk
  • 8 eggs
  • salt and pepper
  • flour
  • bread crumbs
  • deep fat

Instructions

  1. Parboil a turkey of 25 to 26 pounds until fairly done.
  2. Lift out breast and cut steaks as from a beef tenderloin.
  3. Dip steaks in a batter made of milk, eggs, salt and pepper.
  4. Dredge in flour, then dunk back into batter and finish off with bread crumbs.
  5. Fry in fat (350°) until golden brown.
  6. Serve with onion rings made in the same way.
