Ingredients

  • 1 lb. turtle for stewing (green, jellylike part)
  • 4 medium potatoes
  • 1 onion
  • 1 cup tomato
  • 1 sweet pepper
  • 1 cup sherry

Instructions

  1. Scald the turtle with boiling water and remove the hard shell.
  2. Clean the turtle well with lime, then season with salt, black pepper, and garlic. Sprinkle with capers and Worcestershire sauce and let stand for 1 to 2 hours.
  3. Chop the onion, tomatoes, and sweet pepper.
  4. Saute the chopped vegetables in oil and butter.
  5. Add the turtle meat and allow it to brown.
  6. Pour on 2 cups of warm water and steam until tender.
  7. Quarter the potatoes and add them to the stew.
  8. Let the stew simmer until the gravy thickens.
  9. Add sherry just before serving.
  10. Serve piping hot.
