Tvp Vegetable Stew
Ingredients
- 3 tablespoons vegetable oil ⓘ
- 2 cups onions, chopped
- 2 garlic cloves, minced ⓘ
- 4 cups tomatoes, crushed ⓘ
- 3 cups assorted fresh vegetables, chopped ⓘ
- 3 cups vegetable broth ⓘ
- 2 cups water ⓘ
- 2 cups potatoes, diced ⓘ
- 2 cups textured vegetable protein, dry granules ⓘ
- 1 teaspoon ground cumin ⓘ
- 1 teaspoon turmeric ⓘ
- 1 teaspoon black pepper ⓘ
- 1 teaspoon salt ⓘ
Instructions
- Heat the oil in a large pot over medium-high heat.
- Add the onions and saute until golden.
- Add the remaining ingredients and stir well to combine.
- Bring to a boil, then reduce heat to medium and simmer until the stew thickens, about 30 minutes.
