Two-Corn Bread

Ingredients

  • 3 eggs
  • 1 c. cream-style corn
  • 1 c. cream-style cottage cheese
  • 1 c. all-purpose flour
  • 1 c. yellow corn meal
  • 1 Tbsp. sugar
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt

Instructions

  1. Beat eggs and cottage cheese until smooth.
  2. Stir in corn; set aside.
  3. In large bowl, mix all other ingredients together. Combine with egg mixture; stir just until blended.
  4. Bake in muffin pan at 375° for 30 to 35 minutes.
  5. Serves 9.
