- In a large bowl, whisk together chopped basil, olive or salad oil, white wine vinegar, Dijon mustard, salt, and sugar until blended; set aside.
- Bring 3 quarts of water to a boil in a 5-quart saucepan.
- Fill a large bowl with ice water.
- Cut a small 'x' in the stem end of each cherry tomato.
- Add 1 pint of cherry tomatoes to the boiling water.
- After 5 seconds, use a slotted spoon to remove the tomatoes and transfer them to the ice water to cool.
- Repeat the process with the remaining cherry tomatoes, heating the water to boiling before adding each pint, and adding more ice to the water as needed.
