Ingredients

  • 1/4 cup chopped fresh basil leaves
  • 2 tablespoons olive or salad oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 3/4 teaspoon salt
  • 1/2 teaspoon sugar
  • 4 pints cherry tomatoes
  • 4 medium-sized tomatoes
  • basil sprigs for garnish

Instructions

  1. In a large bowl, whisk together chopped basil, olive or salad oil, white wine vinegar, Dijon mustard, salt, and sugar until blended; set aside.
  2. Bring 3 quarts of water to a boil in a 5-quart saucepan.
  3. Fill a large bowl with ice water.
  4. Cut a small 'x' in the stem end of each cherry tomato.
  5. Add 1 pint of cherry tomatoes to the boiling water.
  6. After 5 seconds, use a slotted spoon to remove the tomatoes and transfer them to the ice water to cool.
  7. Repeat the process with the remaining cherry tomatoes, heating the water to boiling before adding each pint, and adding more ice to the water as needed.
