Ingredients

  • fresh broccoli florets
  • tomato
  • sugar peas
  • water
  • fresh cauliflower
  • carrot
  • olive oil
  • hair spaghetti
  • parsley
  • pine nuts
  • zucchini

Instructions

  1. Coat a large, nonstick skillet with vegetable cooking spray and add the olive oil. Heat over medium-high heat until hot.
  2. Add broccoli florets, cauliflower, carrots, zucchini, and minced garlic to the skillet. Saute for 4 minutes.
  3. Stir in sugar peas and McKay's broth, then cover and reduce heat. Cook for 6 minutes.
  4. Add blanched chopped tomatoes and cook for an additional 3 minutes.
  5. Meanwhile, cook the hair spaghetti according to package instructions until al dente. Drain.
  6. Combine the cooked spaghetti with the vegetable mixture, sprinkle with pine nuts and chopped parsley, and serve warm.
