Ingredients

  • vegetable oil cooking spray
  • 1/4 cup cornmeal
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 2 teaspoons Old Bay seasoning
  • 4 fish fillets (catfish, flounder, or sole)

Instructions

  1. Spray a baking sheet to coat with vegetable oil cooking spray.
  2. Combine cornmeal, dried thyme, dried basil, and Old Bay seasoning on a large platter.
  3. Dip each fish fillet into the seasoned cornmeal mixture until coated on both sides.
  4. Place the coated fillets on the prepared baking sheet and spray lightly with cooking spray.
  5. Bake at 400° for 20 minutes, then reduce heat to 350° and bake for an additional 5 minutes until golden and the fish flakes easily.
