Ingredients

  • 1 cup pancake mix
  • 2 Tbsp oleo
  • 16 oz well drained fruit (canned, frozen or fresh)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, melt oleo over medium heat and add drained fruit, spreading evenly.
  3. Sprinkle pancake mix evenly over the fruit layer.
  4. Pour pancake batter over the mixture, covering the fruit.
  5. Bake in the preheated oven for 15 minutes or until the pancake is cooked through and golden.
  6. Remove from oven, invert onto a serving plate, and serve warm.
