Ingredients

  • 2 c. flour
  • 1 3/4 c. ground, blanched almonds
  • 1 vanilla bean
  • 1/4 c. plus 1 Tbsp. sugar
  • 1 2/3 sticks cold, unsalted butter
  • 3/4 c. confectioners sugar

Instructions

  1. Combine the flour, sugar, and ground almonds in a food processor.
  2. Cut in the cold, unsalted butter until the mixture resembles coarse crumbs.
  3. Turn the mixture onto a pastry board and quickly knead into a smooth ball.
  4. Wrap the dough in plastic wrap and refrigerate for 1 hour.
