Ingredients

  • 1 cup unsweetened pineapple juice
  • 1/2 cup orange juice
  • 1/8 teaspoon salt
  • 24 regular marshmallows, quartered
  • 1 cup whipping cream, whipped
  • 32 vanilla wafer cookies

Instructions

  1. In a saucepan, combine pineapple juice, orange juice, and salt; bring to a boil.
  2. Add the quartered marshmallows to the boiling mixture.
  3. Stir constantly until the marshmallows are melted. Refrigerate the mixture until slightly thickened, about 20 to 30 minutes.
  4. Fold in the whipped cream gently into the marshmallow mixture.
  5. Place a layer of vanilla wafer cookies in the bottom of an ice cube tray or similar container.
  6. Top the cookies with the marshmallow mixture.
  7. Refrigerate the assembled dessert for 8 hours.
  8. Cut into squares before serving.
