- Preheat the oven to 325°F. Line a baking sheet with parchment paper. Blanch the zucchini in boiling water for 2 mins. Drain and refresh with cold water.
- On a lightly floured work surface, roll out the pizza dough into a rectangle and drizzle with oil. Spread the zucchini, tomatoes, and arugula over the dough. Season with salt and black pepper and sprinkle with the cheese. Roll up from one of the long ends and cut into 12 slices. Place slices on the baking sheet and bake for 10-12 mins, until browned.
