Ingredients

  • 2 medium squash, sliced
  • 1 large onion, chopped
  • 1 lb. beef tips
  • 2 medium bell peppers, cut in large pieces
  • 2 Tbsp. margarine

Instructions

  1. Brown the beef tips in a large skillet and set aside.
  2. Saute the sliced squash, chopped onion, and bell peppers in the same skillet with margarine until tender.
  3. Add the browned beef back to the skillet and simmer for 30 minutes.
  4. Season with salt and pepper to taste and serve over rice.
