Vidalia'S Omelet

A flavorful omelet featuring caramelized Vidalia onions, fresh basil, sun-ripened tomatoes, and sharp cheddar, perfect for a satisfying breakfast or brunch for two.

Ingredients

  • 4 tbsp butter
  • 1 fist-size Vidalia onion, finely chopped
  • 4-5 leaves fresh basil, coarsely chopped
  • 4 large eggs
  • 6 slices sun-ripened tomato
  • 1/2 cup sour cream
  • fresh black pepper
  • 1 cup sharp cheddar cheese, grated

Instructions

  1. Melt 2 tbsp butter in a non-stick small skillet.
  2. When it starts to crackle, add the finely chopped Vidalia onion.
  3. Toss frequently to caramelize the onion outside of the pieces.
  4. Set the caramelized onion aside.
  5. In the same skillet, melt 1 tbsp butter.
  6. Crack two eggs into a bowl.
  7. Add 1/4 cup sour cream and stir just enough to blend well.
  8. Pour the egg mixture into the skillet.
  9. Allow to cook about 30 seconds.
  10. Stir from the bottom with a spatula.
  11. Continue cooking for about 45 seconds more.
  12. Use half of the grated cheddar cheese and half of the caramelized onion to make a line down the middle of the eggs.
  13. Continue cooking until the cheese starts to melt.
  14. Lift the pan from heat and shake back and forth to loosen the omelet.
  15. With a flip of the wrist, fold the omelet in half and slide onto a plate.
  16. Sprinkle with black pepper and chopped basil.
