Vince's Rabbit features tender rabbit cooked in creamy mushroom soups with savory seasonings, perfect for hearty family dinners and those who enjoy comforting, flavorful poultry dishes.

Ingredients

  • 6 to 8 rabbits, cut up
  • 2 cans cream of mushroom soup
  • 2 cans golden mushroom soup
  • 2 pt. half and half
  • 2 envelopes G. Washington rich and brown seasoning
  • parsley flakes
  • pepper
  • salt

Instructions

  1. Parboil the rabbit pieces in a large kettle with enough water to cover for 45 minutes, adding salt, pepper, and garlic powder to the water.
  2. Sprinkle dry onion soup mix over the bottom of a large roaster and place the parboiled rabbit pieces inside.
  3. Sprinkle parsley flakes and the seasoning envelope over the rabbit pieces.
  4. Mix the cream of mushroom soup, golden mushroom soup, and half and half together and pour the mixture over the rabbit.
  5. Cover the roaster and bake at 300°F for 2 1/2 to 3 hours, basting and turning the pieces every 45 minutes.
  6. Uncover near the end of cooking to brown the rabbit if necessary.
