- Cream the butter and sugar together.
- Add the egg yolk and sifted flour to the mixture.
- Beat well and spread the dough evenly in a 15 x 10-inch jelly roll pan.
- Beat the egg white slightly until frothy.
- Brush the top of the dough with the beaten egg white.
- Smooth the surface with fingertips.
- Sprinkle the chopped pecans over the dough and press them in.
- Do not grease the pan before baking.
- Bake at 275°F (135°C) for 1 hour.
- While hot, cut into squares to prevent crumbling.
