Ingredients

  • 2 sticks butter
  • 1 egg, separated
  • 1 cup sugar
  • 2 cups plain flour, sifted
  • 1.5 cups chopped pecans
  • 2 teaspoons vanilla

Instructions

  1. Cream the butter and sugar together.
  2. Add the egg yolk and sifted flour to the mixture.
  3. Beat well and spread the dough evenly in a 15 x 10-inch jelly roll pan.
  4. Beat the egg white slightly until frothy.
  5. Brush the top of the dough with the beaten egg white.
  6. Smooth the surface with fingertips.
  7. Sprinkle the chopped pecans over the dough and press them in.
  8. Do not grease the pan before baking.
  9. Bake at 275°F (135°C) for 1 hour.
  10. While hot, cut into squares to prevent crumbling.
